OMG chicken salad of JOY
May. 2nd, 2009 12:58 pmI made this yesterday and it was so amazingly wonderful I had to share.
double-handful of fresh salad greens (we had little gem lettuces)
1 1/2 cups diced cooked chicken (had been roasted with herb butter the night before)
1/2 a cucumber
1 carrot
handful of snow peas
8 stems fresh cilantro
a few chives
a few sprigs of mint (all the herbs were from our garden, yay!)
3 tbsp roasted sesame oil
1 1/2 tbsp unseasoned rice vinegar (if you use seasoned rice vinegar, I would cut the honey and salt)
1/2 tsp soy sauce
1/2 tsp honey
about 5 shakes of nanami togarashi
salt and pepper to taste
Peel and julienne the cucumber and carrot. String and julienne the snow peas. Place these in a rather large bowl with the diced chicken and salad greens. Mix together the sesame oil, vinegar, soy sauce, honey, nanami togarashi, and salt and pepper until well blended. Dress the salad and toss lightly. Snip all the fresh herbs into the bowl and toss again. Serve immediately to two or three enthusiastic people.
Tip: my favorite way to do blend salad dressing is to put the ingredients in a small jar with a tight-fitting lid and shake until emulsified.
